This easy and delicious Middle Eastern Cucumber Tomato Salad is one of my staple low calorie side dish recipes. It pairs well with just about everything and is such a light, crisp and refreshing salad.

I often tire of salads with lettuce, so this Cucumber Tomato version is one of my favorite salad recipes. Sometimes, I’ll add a few variations to it, like adding fresh mint or using lime juice instead of lemon. It’s also great added to some quinoa or couscous.

I think it makes a great addition to many meals, that is so simple, yet impressive. Enjoy!

CUCUMBER TOMATO SALAD RECIPE

One of my go-to quick and easy salad recipes, this Middle Eastern Cucumber Tomato Salad Recipe is delicious, lovely, and very low calorie. It’s fresh, crisp taste makes it a great summer lunch idea.

Ingredients

  • 4 Persian cucumbers - (chopped)
  • 3 Roma tomatoes - (chopped)
  • 1 small yellow onion - (finely chopped)
  • ¼ cup flat leaf parsley - (finely chopped)
  • Juice from ½ a lemon
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Combine all ingredients in a large bowl and mix well. Serve immediately.

      Instead of obsessing over the point value, do what YOU feel comfortable doing. When I was the most successful with WW, I made it fit me…my lifestyle. I lost 100 lbs and kept them off for many years. It was when I fell off the WW wagon, jumped back on and determined that I would follow it exactly that I failed over and over and over.

      This salad is still great even if you leave out the olive oil.

      I was going to ask what others have asked – how can 1/4 T. of olive oil per serving (which is the only non-zero points ingredient in this recipe) equal out to 3 points per serving? I would log this as 1 point per cup/serving since all the other ingredients are zero points each.

      I’ve also learned on the WW site, that you cannot use the recipe builder for accurate points calculating because as someone else noted, it just looks at the nutritional content and doesn’t know that this ingredient is actually considered zero points by WW. It’s rather odd that the recipe builder doesn’t know this already, but I just add up ONLY the ingredients that I know have points, according to the WW PP program. Hence, this dish is 1 point per cup/serving.

      I love your recipes, but now I’m wondering how much I need to add up each one myself so I don’t get stuck with added points from the recipe builder when in reality the points should be lower. Is there some reason you use the recipe builder calculation on such recipes? Thanks for any light you can shed on this conundrum!

        Great question…this is a very tricky situation, and it seems like different Weight Watchers leaders are all saying different things. If you are only calculating the olive oil, then yes, it would be one Points +. But when you add up all the nutritional stats of all the ingredients, including the tomatoes and cucumbers, then it comes out to 3 Points +. I’m going to post on the Weight Watchers forum today and see if I can get some clarification. In the meantime, I’d say to just count it as you feel fit.

      I can’t say that I’ve ever seen Persian cucumbers. Do they have a lot of seeds, or are they more like English cucumbers?

      I did this, but with just cucumber, tomato, onion and light (red-fat) Ranch – mine came out to 1PPV, but I think the oil version would be tasty and worth the additional PPV. :)

      If you put the ingredients into the “recipe builder” in the online WW tool it does all add up to 3 points per serving. The explanation on their website is “PointsPlus values for ingredients may add up differently in the Recipe Builder then the PointsPlus Tracker. This is because the nutrition information per serving for the entire recipe – including fruits and vegetables – is calculated before the PointsPlus value is applied.”

      Looks good and refreshing, but cant understand how you figure 3 points per serving with only one tablespoon of oil for 4 servings? I can see 3 points if someone were to eat the entire bowl…. Veg, lemon/lime juice have 0 points.

        i agree, apparently laaloosh is not up on current ww info……
        veggies are 0 points….. i think laloosh “to be credible with ww goers” needs to “always” stay up with the changes of ww…..it makes me leary of the counts they give on recipes

      how did you get to 3 points plus per servings? everything is zero ‘points plus’ except for the olive oil, when i enter all of that into ww it comes back as 2 points plus per serving. which i still think is a bit silly since it’s only 1 tablespoon of olive oil between 4 servings. i’m totally gonna make this for dinner though :) i’ll just count it at 1 or 2 points plus per serving.
