No Bread, No Worries – make some easy flat bread
Flatbread is any kind of bread that is, well, flat. It may be made with unleavened dough, as is the case with many flat breads, or it may be made from leavened dough which is flattened out before baking. Many versions of flatbread are made throughout the world, and was probably one of the earliest bread products ever made. Some of the oldest surviving examples of food found in tombs and archaeological sites have been flat breads. These breads vary widely in size, shape, texture, and ingredients.
The recipes below make lovely soft flatbread and are really easy.
Hints:
• Make sure you have fresh ingredients; otherwise your bread isn't going to work as well.
• Make sure your BBQ plate or pan is really hot before placing the flat bread on it to cook.
• Sprinkle the base of the grill plate or pan with a little semolina.
Easy Flat Bread
This is a great, easy flat bread recipe that can be used as the base for making pita sandwiches, pizza or pretty much anything.
Ingredients:
3 cups plain flour
1 cup ice water
3 tblspns butter
1 tspn salt
2 tspns baking powder
pinch of baking soda
Combine all the ingredients in a large bowl and mix to form a dough. (Get your clean hands in the bowl, it’s much easier.)
Drop the dough onto a lightly flour board and knead for just a minute or so until it all comes together.
Cut into about 8 equal pieces. (You can make them smaller or larger – depending on how big or small you want each piece of bread.)
Dust a rolling pin with flour and then roll out each piece of dough into a reasonably thin 20cm (8 inch) circle. Or you can use the palm of your hand and press it out and evenly as you can.
You can stack each rolled piece of flatbread between some greaseproof paper as you go.
Preheat your BBQ plate or heavy based pan and have it nice and hot. You can spray it very lightly with a little oil.
Cook each flatbread for 2 to 3 minutes on each side or until they are slightly puffy and lightly browned.
Be careful as these flat breads cook fast and you'll burn them.
Serve warm.
They are really good, and so easy.
You can turn the flatbread into pizza bases.
Quick Flat Bread
Makes approx 5 medium-thickness flat breads
Ingredients:
2 cups white flour (bread flour would be good, and you can substitute 1 cup white flour and 1 cup of wholemeal flour if you want)
1 tblspn baking powder
1 tspn raw sugar (or whatever you have)
1 tspn salt (or to taste)
1/4 cup oil
1 cup luke warm water
In a large bowl, mix the dry ingredients and 1 teaspoon ONLY of the oil.
Slowly add the water and mix with a knife or clean hands, until the mixture comes together in a moist, but not too sticky dough.
Drop the dough onto a lightly flour board and knead for just a minute or so until it all comes together into a firm ball.
At this stage you can either use the dough straight away, or refrigerate it for a couple of days, or freeze it to use later on.
Forming thin flat breads - soft Tortilla style
Get your BBQ plate or heavy based pan ready, as above.
Pull off a piece of dough about the size of a golf ball and roll it around in your hands a little, then press it onto a lightly floured surface and roll from the centre out, rolling it as thin as you can and into a circular shape.
Cook each flatbread for a minute or so on each side or until they are slightly puffy and lightly browned.
Be careful as these flat breads cook fast and you'll burn them.
You can use a little more dough and make a thicker, pita style flat bread - don't roll it out too thin, or turn the dough into a small pizza base by using a piece of dough about the size of a tennis ball and either flattening it out with the palm of your hand, or roll it out. Top with your desired toppings and cook in the camp oven until done.
